Pamela Elizabeth, the innovative restaurateur behind Blossom, Blossom du Jour and Urban Vegan Kitchen, proudly opened a luxury dairy-free chocolate, confection, and pastry shop in the heart of Chelsea alongside Executive Chocolatier and Pastry Chef, Damion Badalamenti.
I had a quick taste of the hot cocoa and couldn’t believe there wasn’t any dairy in it. There was a touch of Amaretto, but I couldn’t place the other ingredients — they’re a secret.
Samples of cake and cocoa brittle were on hand.
Their tastes at first were innocuous, but the after flavor was chocolaty and delicious. I wouldn’t have guessed these tidbits didn’t have dairy or a load of sugar. Would love to pick the brain of Damion Badalamenti for his recipes.
